Thrifty Thursday

If you haven't stepped over onto The Vanilla Tulip's blog you are missing out! I discovered her sweet blog a few years ago and absolutely love reading it and keeping up with her sweet family! I have done some advertising through her and let me just tell you...she is the sweetest person and so helpful!

So today we are linking up with The Vanilla Tulip for Thrifty Thoughts Thursday!
As I was thinking about the different ways that I try to save on time or money one of my favorite recipes came to mind.



Chobani Greek Yogurt Pancakes
(I alter the recipe a bit)

  • ½ c Chobani Vanilla Greek Yogurt
  • 1½ c all-purpose flour{I use Whole Wheat Flour}
  • 1½ t baking powder
  • ¼ t baking soda
  • ½ t salt
  • 1 large egg, lightly beaten
  • ¾ c whole milk {I use Almond Milk here instead}
    -I also add a scoop of Vanilla Protein Powder to the mix.
    -Dash of Cinnamon 
    -Tablespoon of Milled Flaxseed

    Mix the dry ingredients together and then wet. Stir dry into wet. At this point I add more of the almond milk, because of the protein powder. Add enough to get a nice pancake consistency.

    HERE comes my thriftyness...I mix the batch of pancakes up on Sunday. Because I am a big time breakfast eater and a firm believer that breakfast is the most important meal of the day {A good protein filled breakfast} is important to me. I love waking up during the week and knowing that I already have these yummy pancakes made!

    So, here's what I do.

    Get my griddle nice and hot and make the whole batch at one time! Let them cool,the week.  pop them in a Ziplock baggie and keep in the fridge for the week.

    I have also doubled the batch and made these the same way but have froze them! {I did this in the summer when I had more time and was prepping for the school year}

    When I froze them I wrapped a serving {Usually two} in foil and then put them in a gallon sized Ziplock bag to make sure that they were extra protected.

    When I wanted some, I just took the serving out of the freezer and popped them into the microwave under a damp paper towel for about 1 minute.

    YUMMM.
    Fresh, nutritiously packed breakfast to get my day started!

  1. Great idea! I need to start doing this for my kids! I agree that breakfast is the most important meal. I love knowing my kids started off the day with a good, healthy meal.

  2. My pancakes aren't as healthy (or as thrifty)....but i freeze them, too! My oldest will sometimes even request to eat it frozen. Whatever! :)

  3. Okay...TOTALLY going to do this! Both the freezing and recipe. We love pancakes over here and I always feel a tad guilty because they're so not the best for the kids. This recipe looks AWESOME!!!!!!!
